Protein Apple Cinnamon Breakfast Muffins

The Kodiak Breakfast Muffins were such a hit. I saw this new flavor from Simple Truth, so I had to try it!

Ingredients:

Instructions:

  1. Preheat the oven to 375°F. Line 2 muffin pans with silicone muffin cups (or use a silicone muffin pan). This made about 17 muffins.

  2. In a mixing bowl, combine the muffin mix, Greek yogurt, and Core Power until just combined. Don’t overmix.

  3. Divide evenly between the muffin cups.

  4. Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

  5. Let muffins cool in the pan for a few minutes (this helps the centers set), then transfer to a wire rack to cool completely.

  6. Store in the fridge in an airtight container.
