Protein Apple Cinnamon Breakfast Muffins

These Kodiak Breakfast Muffins were such a hit. I saw this new flavor from Simple Truth, so I had to try it!

  1. Preheat the oven to 375°F. Line 2 muffin pans with silicone muffin cups (or use a silicone muffin pan). This makes about 15-17 muffins.

  2. In a mixing bowl, combine the muffin mix, Greek yogurt, and Core Power until just combined. Don’t overmix.

  3. Divide evenly between the muffin cups. Sprinkle with cinnamon.

  4. Bake for 16–20 minutes, as directed on the package. Bake until the tops are golden, and a toothpick inserted in the center comes out clean. Since we swapped ingredients, keep an eye on them—mine were browning on top at 18 minutes, so I pulled them out. They were a little soft in the center, but after cooling in the muffin tin, they set up perfectly.

  5. I repeat: Let muffins cool in the pan (this helps the center set).

  6. Store in the fridge in an airtight container.
