Breakfast Muffins

Ingredients:

  • Kodiak Cakes Muffin Mix: Chocolate chip or blueberry flavors

  • 1/2 cup vanilla Greek yogurt (I like the zero-sugar option)

  • 1 bottle of Chocolate or Vanilla Fairlife Core Power

  • 1/3-1/2 cup fresh blueberries- for the blueberry flavor.

  • Kodiak pancake batter- to have on hand in case your batter comes out too thin.

Instructions:

  1. Pick which flavor you want to make- I do both each time so that the kids have options. The chocolate chip mix will use the chocolate protein, and the blueberry will use the vanilla protein.

  2. Pre-heat the oven to 350 degrees. Add silicone muffin cups to 2 muffin tins- if making both flavors.

  3. Mix each flavor into a separate bowl with the vanilla Greek yogurt (Chocolate chip + chocolate and blueberry + vanilla)

  4. It should have the consistency of a pancake batter. The zero-sugar Greek yogurt sometimes yields a thinner consistency, so then I’ll add 2-5 Tbsp of Kodiak pancake batter to thicken it up, if needed. Do 1 Tbsp at a time.

  5. Mix in fresh blueberries to the blueberry & vanilla flavor.

  6. Pour each flavor into 12 prepared muffin tins. Sometimes it yields 13-15. Bake for 23-25 minutes.

  7. I store them in the fridge in an airtight container.
