Peanut Butter Oat Bites
The kids ate the whole batch in one sitting. You can serve with yogurt or eggs for protein at breakfast!
Ingredients:
2 cups rolled oats
1/4 cup peanut butter (or any nut/seed butter)
2 ripe bananas, mashed
2 Tbsp sugar-free maple syrup
1/3 cup fresh blueberries (or chocolate chips, dried fruit, etc)
Instructions:
Preheat the oven to 375°F. Grease or line a mini or regular muffin tin, or use a silicone pan. This made 12 regular-sized “muffins.”
In a large bowl, mash the bananas until smooth.
Add the peanut butter, oats, maple syrup, and mix-ins. Stir until well combined.
Spoon the mixture into the muffin cups, filling each about 3/4 full. Press/pat the mixture down firmly.
Bake for 15 minutes, or until firm and lightly golden around the edges.
Let cool before removing from the tin.
Store in an airtight container in the fridge.
