Mini Cottage Cheese Banana Loaves
Ingredients:
2 ripe bananas, mashed
3 large eggs
1/2 cup fat-free cottage cheese
3 Tbsp sugar-free syrup
2 tsp vanilla extract
2 1/2 cups almond flour
1 tsp baking soda
2 tsp ground cinnamon
1/4 cup Lily’s chocolate chips (optional but recommended—these aren’t very sweet; for a sweeter result, use 1/2 cup or more)
Optional add-ins: chopped walnuts (instead of, or in addition to, the chocolate chips. I just used 1/4 cup of chocolate chips, and we were all very satisfied! It helps keep your fat macros down 😜 But walnuts would be super yummy!)
Instructions:
Preheat the oven to 350°F.
In a large bowl, mix all ingredients until well combined.
Pour batter into a prepared silicone mini loaf pan.
Bake for about 30 minutes, or until the top is lightly browned and a toothpick inserted in the center comes out clean.
