Mini Cottage Cheese Banana Loaves

Ingredients:

  • 2 ripe bananas, mashed

  • 3 large eggs

  • 1/2 cup fat-free cottage cheese

  • 3 Tbsp sugar-free syrup

  • 2 tsp vanilla extract

  • 2 1/2 cups almond flour

  • 1 tsp baking soda

  • 2 tsp ground cinnamon

  • 1/4 cup Lily’s chocolate chips (optional but recommended—these aren’t very sweet; for a sweeter result, use 1/2 cup or more)

  • Optional add-ins: chopped walnuts (instead of, or in addition to, the chocolate chips. I just used 1/4 cup of chocolate chips, and we were all very satisfied! It helps keep your fat macros down 😜 But walnuts would be super yummy!)

Instructions:

  1. Preheat the oven to 350°F.

  2. In a large bowl, mix all ingredients until well combined.

  3. Pour batter into a prepared silicone mini loaf pan.

  4. Bake for about 30 minutes, or until the top is lightly browned and a toothpick inserted in the center comes out clean.
