Banana Protein Pancakes
Ingredients
3 eggs
6 liquid egg whites (about 1 cup)
1 ½ cups low-fat cottage cheese
1 ⅓ cups rolled oats
1 ⅓ cups Kodiak pancake mix
3 ripe bananas
2 Tbsp sugar-free syrup
Instructions
Preheat a griddle or large skillet over medium heat.
Add all ingredients to a blender and blend until smooth.
Lightly grease the hot pan.
Pour batter onto the pan and cook like regular pancakes, flipping when bubbles form and the edges look set.
This batch made about 17 pretty good-sized pancakes (like the ones in the photo above!).
Optional toppings: fruit, nuts, sugar-free syrup, etc.
