Kodiak Pancake Muffins

These Kodiak pancake muffins make an easy batch of breakfast portions with toppings for everyone. Set out fruit, chocolate chips, or sprinkles and let the kids choose their favorites.

A QUICK NOTE

These are easy to customize for different family members—divide the batter between the muffin cups first, then give each section its own toppings. Stir the batter only until smooth so the muffins stay tender.

INGREDIENTS

  • 3 cups Kodiak pancake mix

  • 2 cups fat-free Fairlife milk, or milk of choice

  • ¼ cup sugar-free maple syrup

  • Optional mix-ins and toppings: sprinkles, chocolate chips, fruit, or your family’s favorites

DIRECTIONS

1. Preheat the oven to 350°F.

2. In a large bowl, stir together the pancake mix, milk, and maple syrup until smooth. Fold in any mix-ins, if desired.

3. Lightly grease a muffin pan or line it with silicone muffin cups. Fill each cup about ¾ full.

4. Add your desired toppings.

5. Bake for 12–14 minutes, or until the tops are set and a toothpick inserted in the center comes out clean.

6. Let the muffins cool for a few minutes before serving.
