This cheesy cilantro-lime ground beef and rice casserole is made in the Ninja Foodi or pressure cooker for an easy, flavorful family dinner with minimal cleanup.
A QUICK NOTE
Use 1 tablespoon chili powder for a milder casserole or up to 2 tablespoons for more heat. RightRice absorbs liquid quickly, so stir it well before sealing the cooker and use an immediate quick release when the pressure-cooking cycle ends.
COOK TIME
5 minutes at high pressure, plus 3–5 minutes under the broiler
INGREDIENTS
1 pound ground beef
1–2 tablespoons chili powder, to taste
½ tablespoon garlic powder
½ tablespoon onion powder
1 teaspoon smoked paprika
1 teaspoon kosher salt
½ teaspoon ground cumin
½ teaspoon dried oregano
¼ cup tomato paste
¼ cup lime juice, from about 2 small limes
2 cups chicken broth
1 (7-ounce) bag cilantro-lime RightRice
4 ounces shredded cheddar cheese
DIRECTIONS
1. Set the Ninja Foodi to SAUTÉ on high. Add the ground beef and cook, breaking it apart, until browned. Stir in the chili powder, garlic powder, onion powder, smoked paprika, salt, cumin, and oregano near the end of cooking. You can also complete this step on the stovetop.
2. Once the beef is fully cooked, stir in the lime juice and tomato paste until evenly combined.
3. Turn off the sauté function. Add the chicken broth and RightRice, then stir well.
4. Secure the pressure-cooker lid and cook on high pressure for 5 minutes. When the cooking cycle ends, carefully quick-release the pressure immediately.
5. Stir the beef and rice mixture, then sprinkle the shredded cheddar evenly over the top.
6. Use the Ninja Foodi BROIL function for 3–5 minutes, or until the cheese is melted and bubbly. Serve warm.
