Taco Pie

Ingredients:

  • 1 9-inch refrigerated pie crust

  • 1-2 pounds lean ground beef or bison (I use almost all of three Costco 1.4lb packages for 2 pies. Personal preference and macro breakdown.)

  • 1 Tbsp Olive Oil

  • 1 onion, diced

  • 1 bell pepper, diced

  • 1 packet low-sodium taco seasoning

  • ½ cup salsa of choice per 1lb of meat

  • 1 can low-sodium back beans

  • 1 can sweet corn

  • 1 cup shredded Mexican cheese

  • Optional toppings:

    • lettuce, shredded

    • tomatoes, diced

    • low-fat sour cream or Greek yogurt

    • avocado, sliced

    • taco sauce or additional salsa

Instructions:

  1. Preheat the oven to 400° F.

  2. Add the olive oil, ground beef, onion, and bell pepper to a skillet. Once the meat starts to brown, add the salsa, beans, corn, and taco seasoning. Once the ground beef is cooked, simmer until the vegetables are soft.

  3. Place the pie crust in the pie dish. Crimp edges and poke holes in the bottom of the crust using the tines of a fork. Bake for 10-13 minutes or until golden brown.

  4. Transfer the meat mixture to the pie crust. Place taco filling in one even layer. Top with the shredded cheese. Bake for 10 to 13 minutes or until cheese is melted and golden. If making 2 pies as we do, split the meat mixture in half for each pie crust.

  5. Remove from the oven, slice, and serve with desired toppings.
