Single Dish Orzo Chicken Pasta
This creamy one-dish orzo pasta is loaded with chicken, chorizo, vegetables, and plenty of flavor. Everything bakes together in one dish, making it an easy family dinner with minimal cleanup.
A QUICK NOTE
If you haven’t been following along, our family embraced RV life for a year while my husband attended the Naval War College—so this was baked in my tiny RV oven (and photographed in my tiny RV kitchen 😂). Oven times can vary, so check that the chicken is fully cooked and the orzo is tender before serving.
YIELD & BAKE
Yield: 5 servings
Bake: 350°F (180°C) for approximately 50 minutes
INGREDIENTS:
• 1¼ cups (250 g) dry orzo
• 1.1 lb (500 g) chicken breast, diced
• 3.5 oz (100 g) chorizo, diced
• ⅔ cup (150 g) cream cheese
• 2 medium bell peppers, diced (about 1½ cups)
• 1¼ cups cherry tomatoes
• 3½ cups packed spinach
• 2 tsp paprika
• Salt and pepper, to taste
• 2⅛ cups (500 ml) chicken stock
DIRECTIONS:
1. Preheat the oven to 350°F (180°C).
2. Add the orzo, chicken, chorizo, bell peppers, cherry tomatoes, spinach, paprika, salt, pepper, and chicken stock to a baking dish. Stir well to combine.
3. Cover the baking dish and bake for approximately 50 minutes, or until the chicken is fully cooked and the orzo is tender.
4. Remove the dish from the oven and stir in the cream cheese until the pasta is smooth and creamy.
5. Serve warm and enjoy!
