Salted Caramel Snicker-doodle Protein Balls

I was craving snickerdoodle cookies, and these satisfied me!

Ingredients:

  • 3/4 cup oat flour

  • 1/2 cup vanilla protein

  • 1/2 cup caramel chips (I used Lilly’s Salted Caramel Chips)

  • 1 tbsp cinnamon, plus extra to sprinkle on top

  • 1/4 tsp sea salt

  • ½ tsp vanilla extract

  • 1/4-1/2 cup honey or sugar-free maple syrup

  • 1/2 cup nut butter, of choice

Instructions:

  1. In a large bowl, combine all of the dry ingredients. Add the nut butter, vanilla extract, and honey, then mix well. I use my hands to fully combine everything. You can coat the mixture with a little extra protein powder if they are too sticky. (or add a little honey if they are too dry. I included that range because consistency will vary based on the protein powder)

  2. Roll into bite-sized balls.

  3. Store them in the refrigerator. This is where they will harden up a little. They are great to eat right out of the fridge or after returning to room temp, your preference!
