Mini Biscuit Pizza Boats or Pizza Cups
These easy biscuit pizza boats turn refrigerated dough into kid-sized deep-dish pizzas with a thin, golden crust and plenty of room for sauce, meat, and cheese. They are quick to assemble, easy to customize, and perfect for a fun family dinner.

A QUICK NOTE
You can make these with any pizza flavor or topping combination your family enjoys. Try cheese, pepperoni, sausage, ham, chicken, vegetables, or a mix of favorites. Keep the sauce light and use fully cooked meat so the biscuit bottoms bake through. The nutrition estimate below is based on the ground beef and turkey pepperoni version.
YIELD & COOK TIME
Yield: 8 mini pizzas
Cook time: 12–16 minutes
INGREDIENTS:
• 1 tube Jumbo Buttermilk Biscuits (8-count)
• ½ cup pizza sauce, about 1 tablespoon per pizza
• 1½ cups shredded mozzarella cheese, about 3 tablespoons per pizza
• About 12 ounces cooked lean ground beef, about ¼–⅓ cup per pizza
• 24 slices Uncured Turkey Pepperoni, 3 slices per pizza
• Italian seasoning, optional
DIRECTIONS:
1. Preheat the oven to 375°F. Note: I did not need to grease my silicone pans.
2. Place one biscuit in each pan. Flatten and stretch the dough into a thin, even layer across the bottom and approximately ½ inch up the sides, or as high as the dough will comfortably reach. Make sure there are no holes.
3. If the dough shrinks back, let it rest for 2–3 minutes, then gently press it out again.
4. Add approximately 1 tablespoon pizza sauce, a little over ¼ cup cooked ground beef, and 3 tablespoons mozzarella. Sprinkle with Italian seasoning, if desired. Add 3 turkey pepperoni slices to each boat. If your silicone pans are the same size as mine, the pizza boats will not fill them completely.
5. Bake for 12–16 minutes, or until the crust is golden and completely cooked underneath. In a small RV oven, begin checking at 10 minutes and rotate the pans if needed.
6. Let the pizza boats cool for a few minutes before removing them from the pans.
MUFFIN-TIN PIZZA CUP VARIATION
Flatten a biscuit into each greased muffin cup, or use ½ biscuit per cup for smaller pizzas. Bring the dough slightly up the sides. Add approximately 1 tablespoon of sauce, then your preferred cheese and toppings. Bake at 375°F for 12–16 minutes.
