A QUICK NOTE
These ground chicken sloppy joes are sweet, tangy, and easy to customize for your family’s preferred level of heat. For a milder version, reduce or omit the sriracha and jalapeños, then let anyone who likes extra spice add hot sauce at the table.
INGREDIENTS
2 pounds ground chicken
1 tablespoon olive oil
1⅓ cups sugar-free ketchup
2 tablespoons mustard
2 tablespoons Worcestershire sauce
2 tablespoons sriracha or hot sauce
4 tablespoons water
¼ cup diced jalapeños
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon black pepper
For serving: whole-wheat buns, sliced cheese, and a vegetable of choice
DIRECTIONS
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the ground chicken and cook, breaking it into crumbles, until no pink remains.
3. While the chicken cooks, stir together the ketchup, mustard, Worcestershire sauce, sriracha, water, jalapeños, garlic powder, onion powder, and black pepper.
4. Pour the sauce over the cooked chicken and stir well. Reduce the heat to low and cook for 4–5 minutes, until the sauce thickens.
5. Serve on buns with sliced cheese if desired, plus a vegetable on the side.
